Kelp Salad Recipe – For Good Health and Taste

Why should you love kelp salads? For starters, they make for a great meal option that can be made and kept in the fridge. So before you sit down to work from your desk at home, you can rustle up your meal and keep it ready for when you want to eat it quickly. Dressed kelp salads are also good for those who want to have something yummy, without adding on extra calories.

Kelp Salad Recipe

The most important reason is that a kelp salad is a super simple, yet utterly delicious and healthy addition to your meals. This salad is full of nutrients and fiber, thanks to the kelp. Did you know that just 2 tbsp (1/8 cup) of kelp offers Vitamin C (0.3 mg), Vitamin K (6.6 mcg), folate (18.0 mcg), calcium (16.8 mg), magnesium (12.1 mg), and much more? (1) That’s why it is one of the healthiest options for you.

Last but not least, kelp salad is perfect for when you’re in the mood for a big meal but don’t want to feel weighed down afterward. They’re especially great during days when you may not be getting adequate exercise, but are eating a lot—whether you’ve overindulged in cookies while watching a web series, or need a healthy vegetarian option.

Kelp is usually dried and tied in bundles. It can be used to cook salad just like seaweed and also added to soup. You can also get fresh kelp from the market. For those who get dried bundles, soak the dried kelp for 30 minutes before you begin making the salad we are going to tell you about.

Ingredients

  • 200g fresh kelp/ soaked dried kelp
  • 2 tbsp light soy sauce
  • 1 tbsp rice vinegar
  • 1 pinch cayenne pepper
  • 1 tbsp sesame seed oil
  • 1 tbsp mirin (sweet rice wine)
  • 1 tbsp ginger root, grated 
  • ½ tbsp sesame seeds
     

Method

  1. Wash kelp under running water until sand is cleaned off.
  2. Put the kelp in a large container.
  3. Add enough warm water and rice vinegar.
  4. Drain very well. 
  5. If kelp is in one long piece, roll it up and cut into thin shreds.
  6. Soak the cut kelp in icy water and drain well. 
  7. Combine the remaining ingredients, except the sesame seeds in a bowl.
  8. Add kelp. Toss well.
  9. Garnish with sesame seeds.
  10. Serve cold.
